Simple stroganoff
Just about everyone I know who has school-age children is running themselves ragged about now.
If it's not football or hockey practice, it's dance lessons, Scouts, religion classes, youth groups, not to mention homework.
Summer's carefree days are over!
With all the running around, it's hard to find the time to sit down and eat a meal, let alone cook one. Here's an easy weeknight dinner that takes almost no time to prepare and is ready in just a little more than a half-hour (and most of that is the time it needs to simmer).
I amped the flavor of this up a bit with a little marsala wine. If you don't have any, or don't want to use it, don't. This stroganoff is plenty tasty even without it.
Weeknight Stroganoff
1 small onion, chopped
2 pounds ground beef
1 can cream of mushroom soup
1 cup water
1 package onion soup mix
1 small can sliced mushrooms
One-quarter cup marsala wine
One-half cup sour cream
Brown onion with ground beef until meat is no longer pink. Add cream of mushroom soup, onion soup mix, water, wine and mushrooms. Simmer for a half-hour. Stir in sour cream just before serving.
Serve over rice or egg noodles.
