We have a twofer for you this week. Two recipes for the time and convenience of just one.
Making dinners in the slow cooker may seem like more of something you'd do in the winter time, but think about it.
With a little quick prep in the morning, you can head off to work, the park or the pool, and come home to a delicious dinner, without having to suffer with an overheated house or kitchen.
This pork recipes goes together in just a few minutes. Then it cooks while you're having fun in the sun.
The rice might take a little longer because you do a bit of chopping, but only a minute or two.
You can cook it on the stove, or in a rice cooker.
Serve with a crisp green salad, and you are good to go.
Pork and Peaches
4 large boneless center cut pork chops (1 1/2 pounds)
8 ounces salsa
1 15-ounce can sliced peaches
1 8-ounce jar peach jam
One-half teaspoon garlic powder
Salt and pepper
Cut pork into 1-inch thick strips. Season with garlic powder, salt and pepper. Sauté in olive oil until browned. In a slow cooker, stir together remaining ingredients. Add pork. Cook on medium to medium high for six hours or until pork is tender.
Confetti Rice
1.5 cups rice
3 cups beef or chicken broth
1 tablespoon butter
One-half cup chopped Vidalia onion
One-quarter cup chopped green pepper
One-quarter cup chopped red pepper
Bring broth to a boil. Add remaining ingredients and lower heat to a simmer. Cook approximately 20 minutes until liquid is gone and rice is cooked through. Fluff and serve.
