This recipe is one of my all-time favorites. I shared it several years ago when I did a story about meatless meals for Lent, and it was a big hit.

At this time of year, when we're looking for quick, easy and cheap meals (have you gone over your Christmas budget yet? I have!), this Macaroni Pie is a winner. It goes together in no time, and can be used as a main dish or a side dish. It's also great for lunch the next day.

You can also eat it hot or at room temperature. I like mine with a little ketchup on the side.

This recipe is from my mother, and it calls for shortening. You could also use butter, or a combination of the two. My mother hated butter, and would disagree, but I think the butter adds a little more richness. Either way, it's good.

Macaroni Pie

1 pound spaghetti

6-8 eggs

One-eighth cup dried parsley flakes

1 cup-plus, grated Parmesan cheese

One-half cup shortening

Salt and pepper to taste

Cook spaghetti until done; drain. Add shortening, let melt. Add cheese, parsley, eggs, salt and pepper. Pour into greased 9-inch by 13-inch baking dish. Bake at 350 degrees for 25-30 minutes.
