Fried fritters a family favorite

Talk about comfort food! This is a longtime favorite from my mother.

It was also one of the side dishes she was often asked to include when she catered parties or events.

Corn Fritters are easy to make and pretty quick as well. Just keep your eye on them as they cook, so that they don't burn.

We really enjoy them as a side dish with pot roast if we're not having mashed potatoes. The truth is, they're good with just about anything. I would even eat them on their own and would be very content.

Corn

Fritters

One-half cup flour

One-quarter teaspoon salt

Three-quarters teaspoon baking powder

One tablespoon sugar

One egg

One quarter cup water

One tablespoon oil

One cup corn, defrosted or canned

Oil

Confectioner's sugar, if desired

Mix dry ingredients; mix wet ingredients; combine. Don't overmix. Add corn.

Heat about an inch of oil in a frying pain until it sizzles. Drop about a tablespoon of batter into the hot oil and fry. When edges are brown, about a minute or so, carefully flip over to cook the other side. Remove from oil and drain on paper towels.

Sprinkle with confectioner's sugar if desired and serve immediately. If you are making a large batch, you can keep them warm in a preheated oven, or reheat them in the oven later; then top with confectioner's sugar.
